After a heavy dinner the night before, this healthy salad is a refreshing way to use leftover turkey. This traditional Waldorf salad combines celery, grapes, apples, walnuts and turkey in a deliciously creamy dressing.

Ingredients: *serves 4-6

For the salad:

2 cups shredded leftover turkey meat

2 celery stalks, sliced

2 crisp Gala apples, chopped into bite-sized pieces

1 cup red seedless grapes, halved

1/2 cup walnuts, chopped

Leafy lettuce

For the dressing:

1/2 cup plain Greek yogurt

1 T mayonnaise

1 tsp. honey

1 tsp. fresh lemon juice

Pinch of salt and pepper


In a large bowl, combine yogurt, mayonnaise, honey, lemon juice, salt and pepper. Mix well until smooth.

Add the shredded turkey, celery, apples and grapes to the bowl and toss until covered in the dressing.

Lay a large piece of lettuce on a plate and spoon the salad mixture on top.

Top with walnuts and serve cold.
