You’ll absolutely melt over the divine coconut flavor in this recipe. Made with coconut oil instead of butter, these cookies are a coconut lover’s dream!

INGREDIENTS

● ½ cup coconut oil, softened (not melted)
● 1 cup coconut sugar
● 1 egg
● 1 teaspoon vanilla extract
● ¾ cup whole wheat flour
● ½ cup oat flour
● ½ teaspoon baking soda
● ½ teaspoon baking powder
● ¼ teaspoon salt
● ½ cup unsweetened coconut flakes
● ¾ cup miniature dark chocolate chips

DIRECTIONS

1. Preheat the oven to 350°F. Line a baking sheet with a piece of parchment paper.
2. Cream the softened coconut oil with the coconut sugar.
3. Add the egg and vanilla. Beat until creamy.
4. Whisk together the whole wheat flour, oat flour, baking soda, baking powder, and salt in a large bowl.
5. Slowly add the combined dry ingredients to the creamed coconut oil mixture.
6. Stir in the coconut and chocolate chips.
7. Drop cookie dough onto a cookie sheet in 1 tablespoon balls with 1-2 inches in between. Bake for 8
minutes.
