Spring is just around the corner! Here are Three Spring Salad Dressings for you to celebrate with: Lemon Basil Strawberry, Honey Mint, and Basil Chive Garlic. Three unique choices for fresh, light, delicious salads!

Ingredients:

Each recipe yields approx. 1 ½ cups dressing

Lemon Basil Strawberry Dressing

  • 1/2 cup red wine vinegar
  • 4 large basil leaves (approx. 1 Tbsp.)
  • 1 lemon
  • 3 large strawberries
  • 1 tsp. honey
  • Salt and pepper to taste
  • 1 cup avocado oil

Honey Mint Dressing

  • 1/4 cup red wine vinegar
  • 2-3 Tbsp. fresh mint
  • 1 lemon or lime
  • 1 tsp. honey
  • Salt and pepper to taste
  • 1 cup extra-virgin olive oil

Basil, Chive and Garlic Dressing

  • 1/2 cup white wine vinegar
  • 4 large basil leaves (approx. 1 Tbsp.)
  • 1 Tbsp. fresh chives
  • 1 clove garlic
  • 1/2 tsp. stone-ground or Dijon mustard
  • Salt and pepper to taste
  • 1 cup extra-virgin olive oil

Instructions: 

Lemon Basil Strawberry Dressing

  1. Chop basil leaves. Zest and juice the lemon. Chop strawberries.
  2. Put all ingredients (except oil) in blender. Blend for a few seconds.
  3. Add oil slowly while blender is on to emulsify.

Honey Mint Dressing

  1. Finely chop mint leaves. Zest and juice lemon.
  2. Put all ingredients (except oil) in blender. Blend for a few seconds.
  3. Add oil slowly while blender is on to emulsify.

Basil, Chive and Garlic Dressing

  1. Chop basil leaves and chives. Mince garlic.
  2. Put all ingredients (except oil) in blender. Blend for a few seconds.
  3. Add oil slowly while blender is on to emulsify.
