This is a quick-’n-easy lunch or dinner that’s full of delicious flavor. If you love spring rolls with their addictive dipping sauce, you’ll find this Spring Roll Bowl every bit as addicting!! I love it, because it can be enjoyed warm or cold, and it’s loaded with fresh vegetables in each and every bite! You can make this for dinner and have leftovers for lunches. It’s one of my favorite bowls, so you’ve gotta try it!

Makes: 6 servings
Serving size: 1 bowl

INGREDIENTS

7 ounces of rice noodles
1⁄2 cup basil, chopped
1⁄2 cup mint, chopped
1⁄2 cup cilantro, chopped
1⁄4 cup peanuts, chopped
1 avocado, sliced
2 medium carrots, thinly sliced into rounds
1 red bell pepper, thinly sliced into strips
1 serrano pepper, thinly sliced into rounds
1⁄2 cucumber, thinly sliced into rounds
1 chicken breast, cooked and diced (tofu for vegetarian)
Sweet Garlic Lime Sauce

Sweet Garlic Lime Sauce

3 cloves garlic
2 tablespoons rice vinegar
1⁄4 cup brown sugar or agave
1⁄4 cup fish sauce
1⁄3 cup fresh lime juice
1⁄3 cup vegetable oil

DIRECTIONS

1. Place all of the ingredients for the Sweet Garlic Lime Sauce inside of a food processor or
blender.
2. Blend till smooth, then set aside.
3. Cook the rice noodles according to package directions, then divide into 6 bowls.
4. Divide the toppings amongst the bowls, including the sauce.
5. Enjoy!
