Take advantage of grilling season while it’s still here! These Southwest Turkey Burgers are packed full of fresh corn, black beans, sweet peppers and spices. Top them with some sliced avocado and a spoonful of chipotle-lime aioli for a delicious, simple and healthy meal.
Ingredients: *Makes six large patties
Turkey Burgers
- 2 lbs. ground turkey
- 1 cup fresh corn
- 1/2 cup canned black beans
- 1/3 cup sweet red pepper
- 1/3 cup cilantro
- 1/2 cup white onion
- 1 clove garlic
- 1 tsp. cumin
- 1 tsp. Cajun spice blend
- Pepper and salt to taste
- 6 Brioche buns
- Green leafy lettuce
- 1-2 avocados
Chipotle-Lime Aioli
- 1 cup mayonnaise
- 4 canned chipotles in adobo
- Juice of one lime
- Pepper and salt to taste
Instructions:
Turkey Burgers
- Place ground turkey in large bowl.
- Add corn and drained black beans.
- Chop pepper, cilantro and onion, and add to mixture.
- Mince garlic and add spices to mix.
- Blend thoroughly and shape into six large patties.
- Grill over medium heat for five minutes, each side. Serve immediately on buns with aioli, lettuce and avocado slices.
Chipotle-Lime Aioli
- Measure mayo into small bowl.
- Smash chipotles into a paste and add to mayo.
- Add lime juice and stir all together.
- Chill until using.
Notes:
- Add more or less chipotles to mayo to match your desired level of heat.
- These go great with baked sweet potato fries! Use the extra aioli for a delicious fry sauce.
