I love hard-boiled eggs, but I’m always at a loss of what to do with them all after Easter. This year I decided that they deserved to be themselves in all their glory.
- 2 slices whole grain bread
- 1 cup spinach leaves
- ½ avocado, sliced thin
- 2 hard-boiled eggs, sliced thick
- ⅛ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- Toast the bread.
- Top with spinach, avocado, hard boiled egg slices, salt, and pepper.
