Rainy fall weather calls for a warm breakfast that tastes of cinnamon and pumpkin. This hearty oatmeal is a healthy way to start your day, and it’s the perfect way to use leftover pumpkin puree.
Ingredients: *serves 1-2
- ½ cup oats
- 1 cup water
- 2 T milk
- 2 T pumpkin puree
- 1 tsp honey
- 1 tsp pumpkin pie spice
- 1 T brown sugar
- walnuts and cinnamon for topping
- In a small pot, combine oats and water and heat on medium until it begins to boil. Turn heat to low and simmer for 1-2 minutes.
- Add the milk, pumpkin puree, honey, pumpkin pie spice and brown sugar, and stir until completely mixed.
- Remove from heat and top with cinnamon, walnuts and additional brown sugar if desired.
