Rainy fall weather calls for a warm breakfast that tastes of cinnamon and pumpkin. This hearty oatmeal is a healthy way to start your day, and it’s the perfect way to use leftover pumpkin puree.

pumpkin oatmeal

Ingredients: *serves 1-2

  • ½ cup oats
  • 1 cup water
  • 2 T milk
  • 2 T pumpkin puree
  • 1 tsp honey
  • 1 tsp pumpkin pie spice
  • 1 T brown sugar
  • walnuts and cinnamon for topping

Directions:

  1. In a small pot, combine oats and water and heat on medium until it begins to boil. Turn heat to low and simmer for 1-2 minutes.
  2. Add the milk, pumpkin puree, honey, pumpkin pie spice and brown sugar, and stir until completely mixed.
  3. Remove from heat and top with cinnamon, walnuts and additional brown sugar if desired.
