Ready for another tasty pumpkin recipe to celebrate the season? Pumpkin Cake Bars are a traditional favorite, filled with the taste of pumpkin, cinnamon, cloves and spices, and topped with rich cream cheese frosting. This is such a simple and delicious treat to make for Halloween!
Ingredients:
Pumpkin Cake
- 2 cups sugar
- 4 eggs
- 1/2 cup canola oil
- 1/2 cup applesauce
- 1 15-oz. jar pumpkin puree
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- Pinch of salt
- 2 tsp. cinnamon
- 1/2 tsp. each nutmeg, cloves, ginger
Cream Cheese Frosting
- 1 cup butter
- 6 oz. cream cheese
- 5 cups powdered sugar, or to desired consistency
- 2 tsp. vanilla
Instructions:
Pumpkin Cake
- Preheat the oven to 350 degrees.
- Grease the bottom and sides of a jelly roll pan or cookie sheet.
- Whip the sugar and eggs until pale yellow.
- Add the oil, applesauce and pumpkin and blend well.
- Add all the dry ingredients and mix until just smooth.
- Pour into the pan, smooth the top and bake at 350 degrees for 12-15 minutes, until toothpick comes out with crumbs attached but not wet.
- Cool completely before frosting.
Cream Cheese Frosting
- Melt the butter.
- Add all the ingredients together in a mixing bowl, and whip until light, fluffy and smooth.
- Spread on (completely) cooled cake.
