Peach season is coming to an end, so be sure to take advantage of those juicy fruits while you still can! Peach Melba is a simple but delicious dessert of roasted peaches served with vanilla ice cream and raspberry sauce.

Ingredients: Serves: 4-6

Peaches

  • 4-6 fresh peaches
  • 1/4 cup unsalted butter
  • 1 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • Vanilla ice cream

Raspberry Sauce

  • 1 1/2 cups raspberries
  • 2 Tbsp. honey or sugar (add more or less for sweetness)
  • 1 Tbsp. lemon juice
  • Fresh mint for garnish

Instructions: 

Peaches

  1. Preheat oven to 350 degrees.
  2. Cut peaches in half and remove stones.
  3. In small saucepan, combine butter, honey and lemon juice and cook over medium low heat, until butter is melted.
  4. Take off heat and stir in vanilla.
  5. Place peach halves on foil-lined cookie sheet. Drizzle with butter mixture and roast in oven for about 10 minutes. Cool.

Raspberry Sauce

  1. Puree all ingredients until incorporated.
  2. Strain through sieve to remove raspberry seeds.

To serve:

  1. Place one or two peach halves in bowl.
  2. Add scoops of ice cream.
  3. Drizzle with raspberry sauce and garnish with mint.

Notes:

  • Raspberry sauce can be made ahead and stored in fridge.
