When fall finally arrives, I crave anything with pumpkin! Every fall, our family comes together for our annual potato harvest, which usually involves about two weeks of grueling work. I make food and deliver it to the workers each day, and these delicious pumpkin cookies are always a favorite of the harvest crew.
- 1 cup canned pumpkin
- 1 cup white sugar
- 1/2 cup oil
- 1 egg
- 2 1/2 cups flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. milk
- 1 Tbs. vanilla extract
- 2 cups chocolate chips
Combine pumpkin, sugar, oil and egg. Mix well. Add flour, powder, cinnamon and salt. Dissolve soda with milk and stir in. Add vanilla and chocolate chips. Mix well.
Drop by spoonful on greased cookie sheet and bake at 350 degrees for about 10 minutes.
Frosting:
- 1/2 pkg. cream cheese, softened
- 1/2 cup butter, softened
- 1 tsp. vanilla
- 2 cups powdered sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
Soften cream cheese and butter, mix well and add vanilla, cinnamon, nutmeg, and enough powdered sugar to reach desired consistency. Frost cooled cookies.
