Now’s the season for everything pumpkin! These Pumpkin Chocolate Chip Muffins are loaded with gooey chocolate and pumpkin flavor with a dash of zesty orange!
Ingredients:
- 1 3/4 cups flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 2 eggs
- 1 [15 oz.] can pumpkin puree
- 1/2 cup coconut oil, melted
- 1 tsp. vanilla extract
- 1 tsp. orange zest
- 3/4 cup chocolate chips
Instructions:
- Preheat oven to 375 degrees. Line a muffin tin with paper liners, or grease with butter.
- In a large bowl, mix flour, sugars, baking soda, salt, cinnamon and pumpkin pie spice together.
- Add eggs, pumpkin puree, melted coconut oil, vanilla extract and orange zest, and mix with a wooden spoon until incorporated. Gently fold in chocolate chips.
- Spoon into muffin tins and bake 15-20 minutes, or until an inserted knife comes out mostly clean.
