Tired of your morning oatmeal or lunchtime sandwich? Get creative with avocado toast for a fun and simple meal! Caprese, beet & goat cheese and southwestern are just a few of the endless combos you can make. Be creative with your toppings and you’ll never get bored of this meal!

Avocado Toast

Ingredients: *Each type makes 4 avocado toasts

  • 4 slices of your favorite fresh bread

Caprese

  • 1 1/2 avocados
  • 1 cup cherry tomatoes
  • 12 slices fresh mozzarella
  • 1 cup fresh basil

Beet and Goat Cheese

  • 1-1 1/2 avocados
  • 4 small cooked beets
  • 1/2 cup goat cheese
  • 1/2 cup pistachios, crushed (optional)

Southwestern

  • 1 – 1 1/2 avocados
  • 1 cup cherry tomatoes
  • 1/2 cup fresh or frozen white corn
  • 1/2 cup cilantro
  • 1/2-3/4 cup queso fresco or feta cheese

Balsamic Reduction

  • 1 cup balsamic vinegar
  • 1 Tbsp. pure maple syrup (optional)

Instructions:

  1. Toast bread.
  2. Smash avocado and add salt and pepper as desired.
  3. Add toppings to toast. Drizzle with balsamic reduction and enjoy!

Balsamic Reduction

  1. Put vinegar and syrup in small saucepan and simmer over medium=low heat until reduced and syrupy, about 15 minutes.
