Tired of your morning oatmeal or lunchtime sandwich? Get creative with avocado toast for a fun and simple meal! Caprese, beet & goat cheese and southwestern are just a few of the endless combos you can make. Be creative with your toppings and you’ll never get bored of this meal!
Ingredients: *Each type makes 4 avocado toasts
- 4 slices of your favorite fresh bread
Caprese
- 1 1/2 avocados
- 1 cup cherry tomatoes
- 12 slices fresh mozzarella
- 1 cup fresh basil
Beet and Goat Cheese
- 1-1 1/2 avocados
- 4 small cooked beets
- 1/2 cup goat cheese
- 1/2 cup pistachios, crushed (optional)
Southwestern
- 1 – 1 1/2 avocados
- 1 cup cherry tomatoes
- 1/2 cup fresh or frozen white corn
- 1/2 cup cilantro
- 1/2-3/4 cup queso fresco or feta cheese
Balsamic Reduction
- 1 cup balsamic vinegar
- 1 Tbsp. pure maple syrup (optional)
Instructions:
- Toast bread.
- Smash avocado and add salt and pepper as desired.
- Add toppings to toast. Drizzle with balsamic reduction and enjoy!
Balsamic Reduction
- Put vinegar and syrup in small saucepan and simmer over medium=low heat until reduced and syrupy, about 15 minutes.
